Glad you're loving the Touch. Seriously, the iPhone is amazing. It's not without its flaws (there are a few that really annoy me), but I can't get over how great this thing is.
I'm a big fan of Bankarama (paid), eWallet (paid), Toodledo (free), iMapMyFitness (free), Now Playing (free), Pandora (free). I have a ton of others that I use a lot that would probably be a lot less interesting to you or not as useful on the Touch though.
I fucking use this thing as my guitar tuner. How awesome is that!?!
